It’s almost St. Patrick’s Day, which of course means I am perfecting my green foods. I love delighting the boys with random green things that they might not expect.
But they have come to expect this smoothie. And they love it. I use Golden Delicious apples, fresh ginger and loads of frozen spinach. Plus a scoop of protein powder to balance out the carb/calorie/protein ratio. There is a lot of spinach in there, but you can’t taste it; all you taste is the apple ginger goodness – and probably a touch of vanilla if you use a flavoured protein powder. (more…)
These aren’t the prettiest truffles you’ll ever see. They aren’t even as pretty as my Chocolate Coconut Bites from a couple days ago. But OH Buckets, are they tasty! And gluten-free, and vegan, and low glycemic index. I’M GOING TO EAT THEM EVERY DAY….Until I run out. Which, incidentally, is happening pretty quickly. Full chocolate truffles are a bit much for me. They are a little bit too sweet and too chocolatey for my taste, and my blood sugar (I know, you can hate me for saying that). There are so many recipes for peanut butter balls/buckeyes/truffles out there that look great, but aren’t quite what I am looking for. So what’s a gal to do when trying to make gluten-free, low glycemic index, holiday treats that taste great? Experiment. (more…)
It’s holiday season and you know what that means – sugar! Cakes, cookies, candies, shortbread, chocolates, hot chocolate, ciders – there is an endless supply of treats ready to launch my 5 year old off the walls everywhere we go, and our own home is no exception. This year we have some added hurdles. Besides my T1, I’m also not eating gluten, and I am trying to encourage my family to limit the simple sugar treats as well. So I have been eyeing these coconut energy bites on Pinterest, but needed to make a few adjustments. (more…)
